½ cup small tapioca pearls (sago)
1 cup full-fat coconut milk
½ cup half & half (or whole milk + splash cream)
¼ cup sweetened condensed milk
½ tsp vanilla extract (optional)
Pinch of salt
2 ripe mangoes, diced small
½–1 cup canned coconut jellies

Cook the small tapioca pearls (sago) according to package instructions until they are chewy and translucent.

In a mixing bowl, combine the full-fat coconut milk, half & half (or whole milk + splash cream), sweetened condensed milk, vanilla extract (if using), and a pinch of salt. Mix well.

In serving bowls, layer the cooked sago, diced mangoes, and canned coconut jellies.

Pour the coconut milk mixture over the layered ingredients and serve.
