1

Heat 1 tablespoon of olive oil in a frying pan over medium to high heat.

2

Add 1 diced onion and cook for 5 minutes, stirring often until softened.

3

Add 2 cloves of minced garlic and cook for a further minute.

4

Add 1 finely diced carrot and 3 finely diced mushrooms; cook for 2-3 minutes.

5

Add 450 grams (1 pound) mince beef and cook for 5-6 minutes until browned, breaking up large chunks.

6

Stir in 3 tablespoons of tomato puree, 1 teaspoon of dried oregano, and 0.5 teaspoon of dried thyme.

7

Add 1 tablespoon of Worcester sauce and 1 crumbled beef stock cube.

8

Add 2 cans (400g or 14oz each) chopped tomatoes, 0.5 tablespoon brown sugar, and 0.5 teaspoon each of salt and pepper; stir and bring to boil, then simmer for 15-20 minutes.

9

Preheat the oven to 200°C (400°F).

10

In a medium saucepan, melt 4 tablespoons of unsalted butter over medium heat.

11

Add 4 tablespoons of plain all-purpose flour and whisk for about a minute.

12

Add a splash of milk, stirring to incorporate, and continue adding milk until all is used and the sauce thickens, whisking to remove lumps.

13

Add 100 grams (1 packed cup) grated cheddar cheese and a pinch of salt and pepper; stir and turn off the heat.

14

Layer the lasagne by placing a couple of spoonfuls of meat sauce at the base of the dish, followed by 4 lasagne sheets, then 1/3 of the white sauce, and 1/3 of the meat sauce; repeat twice more.

15

Finish with 175 grams (1 and 3/4 cups) of mixed mozzarella and cheddar cheese on top.

16

Bake in the oven for 25-30 minutes until golden and bubbling at the edges.
