Cabbage rolls are a traditional dish in many Eastern European countries, often served during family gatherings and holidays. They symbolize comfort and home-cooked meals, reflecting the agricultural roots of the region. Variations exist, with different fillings and sauces, showcasing local ingredients and culinary traditions.

Quinoa is more nutritious, while bulgur is budget-friendly.
In a bowl, add 1 large onion, 1 tablespoon garlic paste, and 2 medium size tomatoes.
Add 1 teaspoon mixed spices, 1/2 teaspoon ground black pepper, 1/2 teaspoon cumin, 1/2 teaspoon ground black lemon, 1/2 teaspoon turmeric powder, and 1/2 teaspoon paprika powder.
Add 2 tablespoons tomato paste to the mixture.
Add 1 1/2 cups Egyptian rice (washed and soaked for 20 minutes), chopped green bell pepper, chopped coriander leaves, and salt to taste.
Add 3-4 tablespoons lemon juice and 2 tablespoons pomegranate molasses, then mix well to prepare the rice filling.
Blanch 1 whole cabbage in boiling water for 5 minutes.
Trim the cabbage leaves and prepare for filling.
Fill each cabbage leaf with the rice mixture and roll tightly.
Arrange sliced potatoes and sliced tomatoes at the bottom of the pot.
Place the rolled cabbage on top of the potatoes and tomatoes.
In a separate bowl, mix 3 cups of water, 2 blended tomatoes, salt to taste, 1 teaspoon Arabic mixed spices, 1/2 teaspoon ground black pepper, 2 tablespoons tomato paste, 1 tablespoon pomegranate molasses, 3 tablespoons lemon juice, and 2 tablespoons olive oil.
Pour the sauce over the cabbage rolls in the pot.
Cover and cook for 1 and a half hours on medium to low heat.
Once cooked, plate the cabbage rolls.
