Wash the red skinned potatoes thoroughly and cut away blemishes, leaving the skin on.
Dice the potatoes into bite-sized pieces.
Heat olive oil in a hot cast iron skillet.
Add the diced potatoes to the skillet and cook until golden brown, then remove and set aside.
Add ground beef and onions to the skillet and cook until the ground beef is browned.
Drain the cooked ground beef and onions in a strainer to remove excess fat.
Return the skillet to medium high heat and add the remaining vegetables, seasoning with black pepper.
Add the ground beef and onions back to the skillet along with the potatoes.
Season the mixture with cumin, smoked paprika, dry thyme, red pepper flakes, and minced garlic, then toss to combine.
Pour melted butter over the mixture and add Worcestershire sauce, mixing until everything is coated.
Top the dish with about 8 oz of shredded cheddar cheese and cover to let the cheese melt.
