Add lukewarm milk to stand mixer with instant yeast and sugar, mix and let sit for a few minutes.
Add flour, salt, and 1 egg to the mixture and combine.
Gradually add softened unsalted butter a tablespoon at a time until fully incorporated.
Knead the dough for about 10 minutes on medium speed until smooth and glossy.
Divide the dough into five pieces: two 200 g pieces and three 150 g pieces, cover with plastic wrap and let rise for 40 minutes to an hour until doubled in size.
Roll out one of the 200 g pieces of dough into a disc for the bottom layer.
Layer sugar and butter onto the pastry discs, keeping a border around the edges.
Repeat the layering process with the smaller discs of dough and cinnamon sugar mixture.
Roll out the final large piece of dough to cover the entire tart, seal the edges tightly to prevent butter from leaking out.
Cover with plastic wrap and let rise for about 30 minutes.
