Preheat the oven to 160°C.
Line an 11-inch baking tray with baking parchment by tracing around the tray and cutting it out.
Measure and prepare all ingredients before starting to ensure nothing is missed.
In a colander, shake off the powdery bits from the quick cooking oats to leave only the larger flakes.
Mix together the peanuts and oats in a bowl.
In a separate bowl, combine peanut butter, honey, brown sugar, half a tablespoon of water, and half a teaspoon of vanilla.
Heat the wet ingredients on low heat until warm, ensuring they do not boil.
Pour the warm wet ingredients over the peanuts and oats, mixing until everything is coated and crumbly.
Allow the mixture to cool until it is no longer hot, then fold in the chocolate chips.
Spread the mixture evenly in a single thin layer in the prepared baking tray.
Bake in the oven for 15 minutes, then stir the granola, ensuring to take from the edges and move to the center.
Spread the granola back into a thin layer and return to the oven for an additional 5 to 8 minutes, watching closely as baking times may vary.
After a total of about 23 minutes, the granola will be slightly soft but will crisp up as it cools.
If the granola is not as crunchy as desired, bake for a couple of minutes longer, being careful not to burn it.
Once completely cool, store the granola in an airtight container for a couple of weeks.
