1 small knob of ginger
1 red onion
1 fresh chili
2.5 teaspoons curry powder
1 can coconut milk
chopped canned tomatoes
frozen peas
baby spinach

Start by grating the butternut squash using a box grater.

Drizzle olive oil in a nonstick pan and spread the grated butternut squash throughout the pan.
