Add seeded hearthloaf bread to a food processor and pulse until small crumbs form, about the size of peas.
Transfer the bread crumbs to a large mixing bowl.
Process carrots in the food processor until finely chopped and add to the bowl with the bread crumbs.
Process onion until finely chopped and add to the bowl.
Process celery and garlic together until finely chopped and add to the bowl.
Add fresh parsley, rosemary, and sage to the food processor and process until combined, then add to the bowl.
Mix all stuffing ingredients together in the bowl.
Add chicken stock and melted butter to the stuffing mixture and mix well.
Butterfly the boneless turkey breast with skin attached to ensure even cooking.
Cover the butterflied turkey breast with parchment paper and flatten using a meat mallet or rolling pin.
Spread the stuffing evenly over the turkey breast and press down to fit.
Roll the turkey breast tightly, ensuring stuffing doesn't spill out, and tie with butcher string.
Sprinkle the rolled turkey with salt and pepper, then cover with butter.
Transfer the turkey roll to a roasting pan and add onions and chicken stock around it.
Roast in the oven at 375°F for 30 minutes, then reduce heat to 350°F and baste every 20-30 minutes until the turkey reaches 160°F.
Cover with tin foil and let rest for at least 15 minutes before slicing.
