Start with the bacon jam in a cool pan to render the bacon until crispy.
Remove the bacon from the skillet, leaving some bacon fat, and add 2 cups of sliced onions to cook down.
Season the onions with Cattleman's Grill California tri tip seasoning while they cook.
In a separate bowl, mix equal parts maple syrup, brown sugar, and anti-gravity hot sauce to create a sauce.
Once the sauce reduces, add the bacon back into the skillet to warm everything together before blending it.
In another skillet, heat 1 pound of Creekstone ground beef with avocado oil to get a good sear.
Add 1 cup of diced onions to the beef and season with Cattleman's Grill Lonear brisket rub.
Chop the beef while it cooks to ensure it gets a good sear on all sides.
On the opposite side of the griddle, toast the Hawaiian rolls until they are nicely browned.
Melt American cheese on top of the beef mixture once it is cooked through.
Remove the toasted buns and blend the bacon jam until it reaches a desired texture.
Spread Dukes mayonnaise on the bottom half of the buns, followed by the blended bacon jam.
Layer the beef and cheese mixture on top of the bacon jam.
Add romaine lettuce and heirloom tomato slices on top before placing the top bun on.
