Turkish Gozleme with Vegetables and Cheese
Cultural Context
Gozleme, a traditional Turkish flatbread, has roots in the nomadic cultures of Central Asia. It is often filled with various ingredients, reflecting local tastes and available produce. Traditionally enjoyed as a street food or snack, gozleme is a staple at markets and festivals in Turkey. Today, it has gained popularity worldwide, with many variations featuring different fillings, making it a versatile dish for any meal.

Wash and drain the mushrooms, then boil them for a couple of minutes until somewhat soft.
Saute onions in olive oil until translucent.
Chop the boiled mushrooms and add them to the onions, seasoning with salt, black pepper, and pul biber (chili flakes).
Crack eggs into the mixture and gently stir, cooking for 2 more minutes.
Prepare the dough by mixing flour, water, and salt until a dough forms, then knead until smooth.
Cover the dough and let it rest for 30 minutes.
Roll the dough into thin circles.
Place a portion of the mushroom and egg filling on one half of each dough circle.
Fold the other half over the filling and press the edges to seal.
Cook each gozleme in a skillet over medium heat until golden brown on both sides.
