Prepare the batter by blending 1 cup of oats into a fine powder.
Add 1/2 cup of chickpea flour for texture and health benefits.
Incorporate 1/4 cup of semolina, 1/2 teaspoon of salt, and 1/2 cup of thick yogurt.
Mix in 1.5 cups of water gradually to form a smooth batter.
Let the batter rest for about 5 to 10 minutes.
Prepare the vegetable topping with finely chopped onions, tomatoes, green bell peppers, and shredded carrots.
Add chopped green chilies, grated ginger, chopped coriander leaves, salt to taste, and red chili powder to the vegetables.
After resting, check the batter and add more water if it's too thick.
Heat a greased pan over medium heat.
Pour a ladleful (about 1/2 cup) of batter onto the pan.
Add 2 to 3 tablespoons of vegetable topping on top of the batter and press it down.
Add a few drops of ghee or oil around the sides and on top.
Cover and cook for a few minutes until bubbles form.
Flip the uthappam and cook for another minute.
Remove from the pan and serve hot.
