1 tsp salt

1 can diced tomatoes (or 2 fresh tomatoes)
1 large carrot
2 potatoes
8 dates
6 apricots

Wash and cut 1.5 lbs lamb meat into cubes.

Mix lamb with 2 tsp paprika powder, 2 tsp cumin powder, 1/2 tsp turmeric powder, 1 tsp ginger powder, and 1 tsp salt; set aside for 20-30 minutes.

Slice 5-6 garlic cloves and split 2 green chili peppers.

Slice 1/2 red onion.

Heat tagine on medium heat and add 1.5 tbsp olive oil.

Add sliced onions, garlic, and chili peppers to the tagine.

Add 1/2 cinnamon stick to the mixture.

Add the marinated lamb meat and stir to coat with the onion mixture.

Cover and cook over low heat for 15-20 minutes until the meat browns.

Add 1 can of diced tomatoes (or 2 fresh tomatoes diced) to the tagine.

Cover and cook for another 15-20 minutes over low heat until the mixture has more gravy.

Add 1 large carrot cut into pieces length-wise and 2 potatoes cut into pieces.

If the gravy is not sufficient to cook the potatoes, add a little water.

Mix in the carrot and potatoes with the meat and cook for about 10 minutes.

Add 8 dates and 6 apricots to the pot.

Cover and cook for about 15-20 minutes until the potatoes are cooked and the fruits soften.

Remove from heat and sprinkle with chopped parsley.
