3 large shallots or 1 medium onion peeled and finely chopped
2 cloves garlic peeled and crushed
2 teaspoons ground ginger
0.25 teaspoons ground turmeric
0.25 teaspoons sweet paprika
salt
freshly milled black pepper
pinch of saffron threads
450 mls hot water
1 cinnamon stick
2 sprigs fresh thyme
3-4 dried apricots roughly chopped
3 tablespoons freshly chopped coriander
2 tablespoons fresh pomegranate seeds
