Bobotie is a traditional South African dish with roots tracing back to the Cape Malay community. It is a comforting bake of spiced meat topped with a creamy egg custard, often served with yellow rice and chutney. This dish symbolizes the fusion of cultures in South Africa, combining local ingredients with influences from Indonesian and Dutch cuisine. Today, bobotie is enjoyed in homes across the country and has inspired numerous variations, including those using different meats or vegetarian alternatives.

Preheat the oven to 180°C (350°F).
Sauté chopped onion and minced garlic in a skillet until translucent, about 5 minutes.
Remove the sausage casings and crumble the sausage into the skillet, cooking until browned, about 8-10 minutes.
Soak the bread in milk until soft, then squeeze out excess milk and crumble the bread.
Combine the sausage mixture with the crumbled bread, curry powder, chutney, raisins, and turmeric in a large bowl.
Season with salt and pepper to taste, mixing well to combine all ingredients.
Transfer the mixture into a greased baking dish, smoothing the top.
Beat the eggs with the reserved milk and pour over the sausage mixture.
Garnish with bay leaves on top.
Bake in the preheated oven for 30-35 minutes, until set and golden brown.
