Start by making the meat and potato pie filling in a frying pan or wok.

Add half of the olive oil from the ingredients list to the pan and heat it up.

Once hot, add the diced beef and stir-fry until it has some color, about 3-4 minutes, then set aside.

In a separate medium-sized saucepan, add the remaining olive oil and heat it up.

Cover the pan and let it simmer for 1 hour.

After 50 minutes, add the diced potatoes to the filling and stir.

Make an egg wash by whisking a large egg with a dash of milk until it runs off the whisk as a loose liquid.

Assemble the pie by placing the base pastry in the greased pie tin, pressing it down into the corners.
