Pick up a whole beef tenderloin at the butcher shop and isolate the filet from the tenderloin, then trim the silver skin.
Slice each filet into 2-inch thick filet mignon cuts and pat them dry.
Add a hearty dose of salt and pepper to each side.
Load your Traeger hopper with your favorite wood pellet blend.
Pre-heat the Traeger to 375 degrees F.
Sear or grill for 4 to 6 minutes per side along the outer edges of your Traeger.
Prepare an exquisite presentation by serving filet mignon in a cast iron dish, add another layer of Jacobsen salt and garnish with cilantro.
