Heat milk and sugar in a small pot until sugar dissolves.
In the bowl of a stand mixer, add bread flour and dry yeast, then whisk.
In a separate bowl, mix egg yolks with a pinch of salt and vanilla extract, then add sour cream and mix again.
Pour the egg mixture into the flour, followed by the lukewarm milk.
Let the mixer knead everything for about 5 minutes, then gradually add softened butter until a smooth dough forms.
Cover the dough and let it proof in a warm spot until doubled in size, about 1.5 hours.
Deflate the dough and roll it into a rectangle about 1/4 inch thick.
Spread the creamy filling evenly over the dough, leaving a small border.
Roll the dough into a log, tuck in the ends, and place it in a parchment-lined bread pan.
Cover and allow to proof for one more hour until puffy.
Brush the top with an egg yolk mixed with a little milk.
Bake at 350°F for 50 minutes, covering with foil if it browns too quickly.
Remove from the oven and cool on a rack, removing the parchment paper immediately.
Prepare a double boiler to melt chocolate, using half milk and half dark chocolate.
Pour melted chocolate over the cooled bread and decorate with ground pistachios.
