Start by mixing 3 and 1/4 cups (425 grams) of all-purpose flour, 1 and 1/2 teaspoons of SAF gold instant yeast, and 2 teaspoons (8 grams) of kosher salt in a mixing bowl.
Use a stand mixer with a paddle attachment to mix the dry ingredients together.
Add 5 large eggs (240 grams) and 3 tablespoons (40 grams) of cold milk to the dry ingredients and mix until roughly combined.
Switch to a dough hook and knead the dough on first speed for 4 minutes, then increase to second speed and knead for an additional 3 minutes for a total of 7 minutes.
Gradually add 1/3 cup (65 grams) of granulated white sugar to the dough over 5 minutes while the mixer is on second speed.
Once all the sugar is incorporated, the dough should be softer and slightly sticky.
Prepare 1 cup (225 grams) of cold unsalted butter by pounding it between parchment paper until pliable but still cold.
Add the pounded butter to the dough in small pieces and knead on second speed for 10-15 minutes until the dough is silky smooth and pulls away from the bowl.
Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and let it proof for 1 hour at room temperature.
After 1 hour, stretch the dough by pulling the far end and folding it back on itself, then cover again and let it proof for another hour.
