500g sardines, cleaned and filleted
1 cup white wine
1/2 cup red wine vinegar
1/2 cup olive oil
2 medium onions, thinly sliced
1/4 cup raisins
1/4 cup pine nuts
1 tsp sugar
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp ground cinnamon
1/4 cup flour (for dusting)

In a pan, heat the olive oil over medium heat.

Dust the sardine fillets with flour and fry them in the hot oil until golden brown, about 2-3 minutes per side. Remove and set aside.

In the same pan, add the sliced onions and sauté until they are soft and translucent.

Add the white wine, red wine vinegar, sugar, salt, black pepper, and cinnamon to the onions. Stir well and let it simmer for about 5 minutes.

Add the raisins and pine nuts to the mixture and cook for another 2 minutes.

Layer the fried sardines in a serving dish and pour the onion mixture over them.

Cover the dish and let it marinate in the refrigerator for at least 4 hours, preferably overnight.
