Their chewy texture and sweet, nutty flavor make them a beloved treat in many households.

Preheat the oven to 160°C (320°F).
Line a baking tray with parchment paper.
In a large bowl, combine rolled oats, plain flour, brown sugar, granulated sugar, and desiccated coconut.
Melt the butter and golden syrup together in a saucepan over low heat until smooth.
Dissolve the baking soda in boiling water and add it to the melted mixture.
Pour the melted mixture into the dry ingredients and mix until well combined.
Scoop tablespoon-sized portions of the dough onto the prepared baking tray, spacing them apart.
Flatten each portion slightly with the back of a spoon.
Bake in the preheated oven for 12-15 minutes or until golden brown.
Remove from the oven and allow to cool on the tray for a few minutes before transferring to a wire rack.
Store in an airtight container once completely cooled.
