Pour 1/2 cup warm milk into a bowl.
Add 3 tablespoons of instant yeast to the milk and stir; set aside.
In a separate bowl, add 4 cups of flour, making a well in the center.
Add a pinch of salt and 1 tablespoon of baking powder around the edges of the flour.
In the center, add 1 cup of white sugar, 5 eggs at room temperature, 1 cup of vegetable shortening, and 1/4 cup of dry cheese.
Pour in the yeast mixture from earlier.
Using clean hands, mix the ingredients in the center and gradually incorporate the flour from the edges.
Add 1 tablespoon of vanilla extract and mix everything well.
If the mixture is too wet, add an extra cup of flour as needed.
Knead the dough on a floured surface for about 20 minutes, adding more flour if necessary.
For the sweet dough, combine 7 tablespoons of flour, 6 tablespoons of vegetable shortening, and 6.5 tablespoons of powdered sugar in a bowl; mix without adding any liquid.
Grease molds with margarine and flour.
Grease your hands with vegetable shortening to prevent sticking while working with the dough.
Divide the dough into approximately 30 pieces, depending on desired size.
Roll out one piece of dough, leaving it thicker at the top.
Spread the sweet dough mixture from the middle downwards on the rolled-out dough.
Cut strips from the middle downwards on the rolled-out dough.
Begin rolling the dough, being careful not to press too hard on the cut strips to maintain the cachito shape.
Fold the rolled dough to form the cachito and place it in the greased mold.
Brush the tops of the cachitos with a beaten egg for glazing.
Optionally, sprinkle sesame seeds on top of the cachitos.
Bake at 190 degrees Celsius (375°F) for 25-30 minutes until golden brown.
