Prepare the dry rub by mixing 1 cup dark brown sugar, 4 tablespoons smoked paprika, 2 tablespoons garlic powder, 2 tablespoons onion powder, 1 teaspoon black pepper, 2 tablespoons kosher sea salt, 2 teaspoons dry mustard, 2 teaspoons red hot African pepper, and a pinch of cinnamon.

Rub the spice mixture all over the 3 lbs spare ribs and let it sit covered with foil for 30 minutes.

Preheat the oven to 400°F (204°C).

Wash the potatoes and poke holes in them with a skewer, then sprinkle with kosher salt and place them in the oven on the bottom rack.

Place the ribs on a rack in a baking pan and cover them with foil, then put them in the oven on the middle rack.

After 30 minutes, remove the foil from the ribs and seal them well with more foil.

Bake the ribs in the oven for 3 hours.

After 3 hours, brush the ribs with barbecue sauce and put them back in the oven on broil for a few minutes to char the top.

Prepare the loaded baked potatoes by mixing the scooped potato flesh with butter, sour cream, and cheddar cheese, then refill the potato skins and return them to the oven for 5-6 minutes.

Remove the loaded potatoes from the oven, top with bacon bits and scallions, and serve alongside the ribs.
