3 cups spinach, fine sliced/shredded
2 small onions (100 gms), sliced
2 sprigs curry leaves (10-15 leaves)
1 tsp ginger garlic paste
1/4 tsp turmeric
1 tsp red chili powder
1/4 tsp garam masala powder
1/4 tsp salt to taste
2 tbsp oil

Wash and drain the spinach leaves. Remove the stalk and finely slice the spinach leaves.

Slice the onions.

Heat oil in a pan or kadai.

Fry the sliced onions for around 4-5 mins on medium heat, till translucent.

Add the ginger garlic paste. Mix & fry on low heat for 2 mins. Add the curry leaves & give a stir.

Now add the turmeric powder & chili powder and fry on low heat for 1 min.

Add the sliced spinach leaves, mix well and fry on low heat for 1 min. Now add 1/4 tsp salt or to taste, mix well and cook on low heat for another minute.

Break the eggs side by side, sprinkle some salt on the egg yolks and cover for a minute.

Now open the cover and fold in the eggs with the spinach.

Sprinkle garam masala powder and mix.

Scramble and cook for 2 mins on low heat and remove.
