Soft Sada Roti is a staple in Trinidadian cuisine, often served with curries or stews. It reflects the island's blend of Indian and Caribbean influences, making it a beloved comfort food. Traditionally, it's enjoyed during family meals and gatherings, symbolizing hospitality and warmth. Today, it's embraced in various forms across the Caribbean and beyond, showcasing its versatility and appeal.

In a small bowl or basin, add 4 cups of flour, 1 teaspoon baking powder per cup of flour, and 1 teaspoon salt (optional).
Start with about half a cup of water in the center of the flour mixture.
Squeeze the dough to bring it together, using a little more than a cup of water in total.
Use a circular motion to knead the dough, pressing down to smoothen it without folding it over.
Ensure the dough is soft and not too sticky; cover and let it rest for 20 minutes.
After resting, divide the dough into 4 balls (loyahs), sealing them at the top to ensure they swell properly.
Press down on the dough to check readiness; if it stays down, it's ready to roll out.
Place a tawa over high heat until very hot.
Sprinkle flour on the surface and flatten the dough ball, using long rolling strokes to make it even.
Flip the dough and slap it onto the hot tawa; stretch it into shape if necessary.
Once bubbles form on top, turn the roti over and move it around on the tawa for even cooking.
Remove from heat and wrap the cooked roti tightly in a kitchen towel.
Repeat the process with the remaining loyahs, flipping when bubbles appear.
