1 lemon
1 large onion
5-6 green chilies
7-8 garlic cloves
2 chopped tomatoes
2-3 tbsp cooking oil
1/2 tsp grated ginger
2 tbsp coriander powder
2 tbsp red chili powder
1/2 glass water
1/2 tsp garam masala
1/2 tsp black salt
700 grams potatoes
1/2 tsp roasted cumin powder
1/4 tsp black salt
1/4 tsp regular salt
1/2 tsp chaat masala
1 cup yogurt
1.5 tbsp sugar
sev (for garnish)
green chutney (for garnish)
sweet tamarind chutney (for garnish)
chopped onion (for garnish)

Prepare green chutney by blending fresh coriander, garlic, green chilies, ginger, capsicum, ice cubes, cumin seeds, and salt with a little water. Squeeze in a lemon.

Heat 1/2 tbsp cooking oil in a pan, sauté chopped onion, green chilies, and garlic until transparent.

Add 2 chopped tomatoes and cook until they become mushy, then let it cool.

Blend the cooked vegetables with a little water to make a smooth paste.

In a pan, heat 2-3 tbsp cooking oil, add cumin seeds, and then the blended paste, cooking on low to medium flame.

Add 1/2 tsp grated ginger, 2 tbsp coriander powder, and 2 tbsp red chili powder, and cook for 1 minute.

Add 1/2 glass of water to the paste and cook until oil separates, then add the cooked chickpeas, mashing them slightly.

Add 1/2 tsp garam masala and 1/2 tsp black salt, bring to a boil, and then turn off the heat.

For the tikki, boil 700 grams of potatoes, peel, and grate them.

Mix grated potatoes with dry spices (1/2 tsp roasted cumin powder, 1/4 tsp black salt, regular salt, and 1/2 tsp chaat masala) and juice of 1 lemon to form a dough.

Shape the mixture into tikkis, then heat a cast iron skillet with a little oil on medium flame.

Cook the tikkis until crispy on both sides, pressing them down slightly with a spatula.

Mix 1 cup of yogurt with 1.5 tbsp of sugar and set aside.

Serve the crispy tikkis topped with chickpea gravy, yogurt, green chutney, sweet tamarind chutney, chopped onions, fresh coriander, roasted cumin powder, chaat masala, and black salt.
