Orange Glazed Baked Salmon

Make a dry brine with 80 g jaggery powder or brown sugar and 2 tablespoons salt, and zest one orange.
Generously season the salmon with the dry brine mixture.
Set the salmon aside after seasoning.
Melt 100 g butter in a pan, then add 2 cloves of grated garlic and squeeze in the juice of one orange.
Mix in honey to thicken the glaze and add a pinch of salt.
Preheat the oven to 150°C with the fan (or 170°C without).
Place the salmon in the oven for 10 minutes to set the layer before basting.
Prepare the topping by hydrating dried cranberries in orange juice heated to a bubble for 15 minutes.
Roast pine nuts until golden brown, being careful not to burn them.
Glaze the salmon with the orange honey mixture after the first 10 minutes and return it to the oven for another 10 minutes.
Prepare a cream mixture with 100 g cream cheese, 100 g sour cream, and dill, seasoned with salt.
Remove the salmon from the oven and let it cool slightly before adding the cream mixture on top.
Mix the hydrated cranberries with roasted pine nuts, parsley, olive oil, and black pepper to create a topping.
Spread the cranberry nut topping over the salmon before serving.
