8 oz feta cheese
4 medium tomatoes
2 medium bell peppers
1 medium red onion
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup parsley

Preheat the oven to 375°F (190°C).

Chop 2 tomatoes and 1 bell pepper into small pieces.

Dice 1 onion and set aside.

In a bowl, combine the chopped tomatoes, bell pepper, and onion.

Add 1 tablespoon of olive oil, and season with salt and pepper to taste. Mix well.

Transfer the vegetable mixture into individual earthenware dishes.

Crumble feta cheese on top of the vegetable mixture in each dish.

Drizzle a little more olive oil on top of the feta cheese.

Bake in the preheated oven for 25-30 minutes, or until the feta is golden and bubbly.
