1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala powder
2 pinches asafida
1 tsp salt
3 tbsp coconut oil

Wash and dry 350 g of French beans, remove edges and strings, and cut into medium-sized pieces.

Wash, clean, peel, and cut one medium-sized potato (200 g) into medium-sized cubes, then transfer to a bowl of water to prevent discoloration.

Cut two medium-sized onions into broader slices.

Cut two medium-sized tomatoes finely.

Slit two medium-sized green chilies.

Cut eight cloves of garlic finely.

Prepare 1/4 cup of finely cut coriander leaves for garnishing and 1/2 cup of freshly grated coconut.

In an open thick bottom pan, heat 3 tablespoons of coconut oil over medium heat.

Add 1 teaspoon of cumin seeds and let them splutter, then add 2 pinches of asafida.

After a minute, add the finely cut garlic and stir for a minute before adding the sliced onions.

Stir frequently until onions turn translucent, then add the slit green chilies and stir.

Add the potato cubes after discarding the water and stir fry for 3-4 minutes, adding 1/2 teaspoon of salt.

Add coriander powder, cumin powder, Kashmiri red chili powder, and turmeric powder, and stir everything nicely.

Add the chopped tomatoes and 4 tablespoons of water to prevent spices from burning, cooking for around 2 minutes.

Add the French beans and the remaining 1/2 teaspoon of salt, stirring everything properly.

Add 2 tablespoons of water if needed to prevent sticking, cover, and cook for around 10 minutes, checking frequently and adding water as needed.

After 10 minutes, check if the potatoes and French beans are cooked, then add the freshly grated coconut and finely cut coriander leaves, mixing everything nicely.
