Prepare the coconut crab by cleaning and shelling it, keeping the meat intact.
Chop the coconut meat, onion, garlic, bell pepper, and ginger finely.
Heat butter in a skillet over medium heat until melted.
Add onion and garlic, sauté until translucent, about 3-4 minutes.
Stir in bell pepper and ginger, cooking for another 2-3 minutes.
Mix in the chopped coconut meat, bread crumbs, soy sauce, lime juice, black pepper, and salt until well combined.
Remove from heat and let the mixture cool slightly.
Stuff the coconut crab shells with the mixture, pressing down gently to pack it in.
Preheat a steamer or large pot with a steaming rack over medium heat.
Place the stuffed crab shells in the steamer, cover, and steam for 20-25 minutes until heated through.
Optional: Transfer to a baking dish and broil for 3-5 minutes until the tops are golden and crispy.
Garnish with cilantro and chili flakes before serving.
