This casserole combines the flavors of fresh vegetables, spices, and creamy coconut milk, showcasing the vibrant culinary traditions of Jamaica. Today, it is popular not only in Jamaica but also in Caribbean communities around the world, often adapted with local ingredients.

Start by introducing the recipe and its significance for celebrations.
Use boneless saltfish, which is already washed and boiled. If using saltfish with bones, ensure to remove all bones.
Boil the saltfish twice, discarding the water each time, or soak it a few hours before cooking.
Prepare 1.5 cups of sharp cheddar cheese and optionally some mozzarella cheese for topping.
Chop one large tomato, one large green pepper, and one large yellow pepper. Also, have one large chopped onion ready.
Boil Jamaican sweet potato until tender, then cut into bite-sized pieces.
Cook white rice until tender; substitute with any rice if desired.
Add a little hot pepper sauce to taste.
In a pot, heat olive oil and add all the chopped vegetables (onion, green pepper, yellow pepper, tomato).
Season the vegetables with black pepper, garlic powder, and saltree seasoning. Cook for about 5 minutes until softened but still crunchy.
Add the flaked saltfish to the cooked vegetables and mix well. Add a little hot pepper sauce and cook for another 3-5 minutes, then turn off the heat.
Prepare a baking dish by coating the bottom with butter or nonstick spray.
Layer the cooked rice at the bottom of the dish, pressing it down to create a smooth layer.
Add the boiled and cut Jamaican sweet potato on top of the rice, pressing it down as well.
Spread the saltfish and vegetable mixture over the sweet potato layer.
Add a layer of sharp cheddar cheese and optional mozzarella cheese on top, pressing it down gently.
Repeat the layering process with remaining rice, sweet potato, and saltfish mixture, finishing with a final layer of cheese on top.
Preheat the oven to 350°F (175°C) and bake the casserole for 40-45 minutes until golden brown on top.
Once baked, cut into the casserole to check the inside and serve.
