Indian Quinoa and Chickpea Stir Fry

150 grams white chickpeas
1.2 litre water, divided
1/2 teaspoon salt
120 grams quinoa
300 milliliters water
1/4 teaspoon salt
2 tablespoons olive oil
1 teaspoon garlic
2 teaspoons ginger
1 teaspoon green chili
50 grams onion
60 grams bell pepper
100 grams tomato
1/4 teaspoon salt
1/2 teaspoon red chili
1/2 teaspoon paprika
1 teaspoon cumin powder
1/4 teaspoon garam masala
1/4 teaspoon black pepper

In a bowl, add 150 grams white chickpeas, 500 milliliters water and soak overnight.

In a pressure cooker, add soaked chickpeas, 700 milliliters water, 1/2 teaspoon salt. Give it a stir.

Cover and cook until 5 whistles.

Release the pressure and remove it from heat. Keep aside.

In a pan, add 120 grams quinoa, 300 milliliters water, 1/4 teaspoon salt and mix it well.

Stir and bring it to boil.

Cover and cook for 10-15 minutes on moderate heat.

Open the lid and stir it well.

Remove it from heat. Keep aside.

In another pan, add 2 tablespoons olive oil, 1 teaspoon garlic, 2 teaspoons ginger and 1 teaspoon green chili. Stir it well.

Now, add 50 grams onion, 60 grams bell pepper and 100 grams tomatoes. Mix it well.

Cook it for 2-3 minutes on medium heat.

Then, add 1/4 teaspoon salt, 1/2 teaspoon red chili, 1/2 teaspoon paprika, 1 teaspoon cumin powder, 1/4 teaspoon garam masala and 1/4 teaspoon black pepper. Mix it well.

Add boiled chickpeas, 40 grams spinach and give it a nice mix.

Stir and cook for 2-3 minutes on medium heat.

Now, add cooked quinoa and mix it well.

Cook for another 3-5 minutes on low heat.

Remove it from heat.

Serve hot.
