Add water to cover the rice and lentils; season with salt and pepper.
Bring to a boil, then reduce heat to low, cover, and cook until rice is tender, about 15-20 minutes.
While rice and lentils cook, heat olive oil in a skillet over medium heat until shimmering.
Add sliced onions to the skillet; cook until caramelized, about 10-15 minutes, stirring occasionally.
Remove bay leaves from the rice and lentils; fluff with a fork.
Serve the lentil-rice mixture topped with caramelized onions.
