Cook the salmon until it reaches an internal temperature of 145°F, checking every 5 minutes.
Prepare the lemon chive butter by mixing 2 tablespoons of softened salted butter, 1 tablespoon of fresh chives, and the zest of a lemon.
When the salmon reaches about 140°F, spoon the lemon chive butter in dollops on top of the salmon.
Finish cooking the salmon until it reaches 145°F.
Remove the salmon from the grill and finish with fresh lemon juice.
