1

Rinse 1 cup masoor dal (red lentils) thoroughly and soak in water for 2-3 hours.

2

After soaking, drain the water completely.

3

In a blender, add the soaked lentils, 2 dried red chilies, 1 tsp cumin seeds, 1 tsp fennel seeds, and grind into a coarse paste without adding water. The mixture should be thick and grainy.

4

Transfer the ground dal mixture to a bowl.

5

Add onion, carrot, ginger, green chili, coriander leaves, curry leaves, salt, and pepper powder.

6

Mix well to form a dough-like consistency. If the mixture is too wet, add 1-2 tbsp oats or breadcrumbs to bind.

7

Divide the mixture into equal portions and shape them into small, flat patties (tikkis).

8

If the mixture sticks, lightly wet your hands with oil or water.

9

Heat a non-stick pan and lightly grease it with 1-2 tsp oil.

10

Place the patties on the pan and cook on medium heat for 3-4 minutes per side until golden and crisp.

11

Flip carefully and cook the other side. Use minimal oil for a healthier version.
