Chicken Yassa with Vermicelli

Add marinated chicken to the skillet, browning on all sides for about 10 minutes.
Pour in chicken stock and add bay leaves and thyme; bring to a simmer.
Cover and cook for 30-40 minutes until chicken is tender and cooked through.
Remove chicken and let it rest before shredding.
Meanwhile, cook vermicelli according to package instructions; drain and set aside.
Return shredded chicken to the skillet, mixing well with the sauce.
Serve chicken yassa over a bed of vermicelli, garnished with parsley.
