Season beef chuck ribs with chuds barbecue SPG rub on all sides.
Preheat smoker to 300°F and place beef ribs bone side down for about 30 minutes until they develop a smoky flavor.
Melt Irish butter in a large pot over medium heat.
Add chopped onions and sweat until soft and slightly colored, about 2 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Add tomato paste and flour, cooking for another minute to form a roux.
Deglaze the pot with a whole can of Guinness beer, bringing it to a simmer.
Add thyme, diced celery, carrots, salt, black pepper, and smoked beef stock to the pot.
Check on the smoked beef ribs, flipping them for even cooking, and continue smoking until they reach an internal temperature of around 180°F.
Add the smoked beef ribs to the pot with all the bones and let simmer until the meat is tender and shreddy.
