This dish highlights the use of gram flour, a key ingredient in Indian cuisine, and is often prepared during festivals or family gatherings. Modern variations may include different spices or vegetables, making it adaptable to personal tastes.

Heat 1 tbsp of oil in a pan over medium heat.
Add chickpea flour and roast until it changes color and becomes aromatic, stirring continuously.
Transfer roasted chickpea flour to another bowl to prevent burning.
In the same pan, heat the remaining oil and add mustard seeds and cumin seeds; let them crackle.
Add half of the asafoetida, chopped onions, garlic, and green chilies; cook until onions are translucent.
Add roasted cumin powder, roasted coriander powder, turmeric powder, and red chili powder; mix and cook for about a minute.
Stir in the roasted chickpea flour and let it cook for about 2 minutes.
Add chopped tomatoes and cilantro, then gradually add water, mixing to achieve desired consistency.
Add salt and lime juice to taste; allow to come to a boil.
Add the remaining asafoetida and give a final mix before serving.
