Sweet Potato Waffles

1 cup mashed sweet potatoes
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1 cup milk (or plant-based milk)
2 large eggs
2 tbsp melted butter (or coconut oil)
1 tsp vanilla extract

Preheat your waffle iron according to the manufacturer's instructions.

In a large bowl, combine the mashed sweet potatoes, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Lightly grease the waffle iron with cooking spray or a little oil.
