1 cup superfine sugar (330g)
½ tsp agar agar
¼ tsp white vinegar
3 tbsp cornstarch
Green food coloring
1-2 tbsp cake sprinkles (optional)
1 cup heavy cream
⅓ cup powdered sugar
½ cup pomegranate arils
6-8 strawberries, quartered
⅓ cup blueberries
8-10 fresh mint leaves

Preheat oven to 285 degrees F. and line a baking sheet with parchment paper.

Whisk egg whites, vinegar, and agar agar until soft peaks form using a balloon whisk attachment in a stand mixer. Gradually add the superfine sugar, whipping until firmer, followed by the cornstarch, and whip until stiff peaks form.

Add 3/4 of the meringue into a piping bag with a star tip. Mix the remaining quarter with green food coloring – add to a different piping bag.

Use a round mold as a guide, pipe a white meringue circle, smoothing its tips.

Pipe green Christmas trees around the wreath and drizzle over some birthday cake sprinkles.

Let the pavlova bake undisturbed for 75 minutes. Turn off the oven and let the meringue cool completely inside the oven.

Prepare the whipped cream by whipping the heavy cream and powdered sugar to your preferred consistency.

Once completed cooled, top the meringue with the whipped cream. Decorate the pavlova with pomegranate arils, strawberries, blueberries and mint leaves. Enjoy with your nearest and dearest!
