Egg whites are lower in calories.

Whisk together 2 eggs with a pinch of salt and pepper until smooth and well combined.

Heat a pan over medium heat and melt a pat of butter until it sizzles.

Reduce heat to medium-low and pour the egg mixture into the pan.

While the eggs are still runny on top, dip each bread slice in the egg mixture to coat, then flip and place on the eggs.

Cook until the eggs are just set, then carefully flip the whole thing.

If the pan looks dry, add a bit more butter.

Fold the egg overhang inwards over the bread.

Add 2 slices of Canadian bacon to each side of the pan to warm them up.

On one side of the bread, layer the sliced cheddar cheese and top it with the warmed-up bacon slices.

Spread whole grain dijon mustard over the bacon slices.

Fold the other bread slice over the filled half to create a sandwich.
