1

Start by preparing the ingredients for the laksa paste.

2

Use approximately 6 candle nuts, chop them roughly, and add to the blender.

3

Take the coriander root and base part, roughly chop, and add to the blender.

4

Trim the lemongrass to use only the white part, chop roughly, and add to the blender.

5

Peel and chop the ginger and galangal, adding them to the blender as well.

6

Scrape the skin off the ginger with a spoon to minimize waste.

7

Roughly chop fresh turmeric and add it to the blender.

8

Roughly chop the dried and fresh chilies, removing seeds if less heat is desired, and add to the blender.

9

Rehydrate dried shrimp in hot water and add to the blender with some of the soaking liquid.

10

Blend the mixture until smooth, adding more liquid as needed.

11

Peel and chop the eschalots and garlic, then add to the blender with the other ingredients.

12

Add shrimp paste to the blender and blend again until smooth.

13

Prepare the chicken by removing the leg and cutting through the bone, keeping the bone in for flavor.

14

Heat a hot pan with oil, then add the prawns and cook for 5 minutes.

15

Add the chicken to the pan and cover with enough water to submerge it.

16

Cook the curry paste in a separate pan with oil, stirring to release the aromatics for about 30-40 minutes.

17

Strain the prawn stock, keeping the oil on top.

18

Add coconut milk and prawn stock to the cooked curry paste.

19

Cook huiken noodles and eggs in boiling water simultaneously.

20

Once cooked, remove huiken noodles and eggs from the water.

21

Add rice noodles to the boiling water.

22

Pull the cooked chicken into strips for serving.

23

Cook the prawns, fish balls, and tofu in the curry soup.

24

Combine huiken noodles, rice noodles, fish balls, prawns, tofu, garlic chives, coriander, chicken, bean sprouts, and egg in bowls.

25

Ladle the laksa soup over the assembled ingredients.
