In a bowl, combine 1 pound of 80/20 ground beef with 2 chopped jalapenos and mix well.
Form the mixture into patties, aiming for a third pound each.
Place the patties in the freezer for a short time to help them hold their shape.
Sprinkle Pit Boss bold Burger rub on the patties and pat it in.
Place the patties on the left side of the Pit Boss grill at 250°F.
After 30 minutes, flip the patties.
Smoke for an additional 20-30 minutes until cooked through.
Crank the temperature to 400°F to sear the patties, being careful of flare-ups.
Baste the patties with barbecue sauce and let them finish cooking at 300°F.
Add pepper jack cheese on top to melt.
Assemble the burgers with barbecue sauce, bacon, pickled jalapenos, and fried onions on the buns.
