Cut the tips off the plantains.

Cut alongside both ways and use the tip of your knife to pull the skin out with your thumb.

Once the skin is off, cut the plantains into about 1-inch rounds.

Fry the plantain rounds until golden yellow and cooked through.

In a traditional masetta, add fried pork skins, a little ghee, garlic, a pinch of salt, and a pinch of pepper.

Mash the mixture down with the masetta.

If the mixture looks dry, add a little olive oil to bring moisture for binding.

Scoop out the mixture with a spoon and form into balls using your hands.

If you don't have a masetta, use a bowl and a potato masher to mash the ingredients together.

After forming the balls, you can fry them again or bake in the oven at 350°F for 10 minutes to get them crunchy.

Prepare a sauce with half a tablespoon of parsley, garlic, mayonnaise, and ketchup.
