Add cubed beef and brown on all sides, about 8-10 minutes.
Sprinkle paprika and cayenne pepper over the beef, stirring to coat.
Add chopped carrots and potatoes, mixing well with the beef.
Pour in beef stock and add bay leaves and thyme.
Bring to a boil, then reduce heat to low and cover.
Simmer for 1.5 to 2 hours, stirring occasionally, until beef is tender.
Add chopped tomatoes and season with salt and black pepper.
Cook for an additional 15-20 minutes, until tomatoes are soft.
Stir in lemon juice and chopped parsley before serving.
