Take one stick of butter and freeze it for at least one day.
Shred the frozen butter using a food processor.
Remove any small pieces of butter that do not shred and set aside.
In a mixing bowl, add 2.5 cups of self-rising flour and 2 tablespoons of granulated white sugar, then mix the dry ingredients.
Add the shredded butter to the flour mixture and mix until well incorporated.
Make a well in the center of the mixture and add 1 cup of cold buttermilk, mixing until combined.
Flour your countertop to prevent sticking, then knead the dough gently until it holds together in a rectangular shape.
Fold the dough four to seven times to create layers, patting it down and turning it each time.
Shape the dough into a rectangle or square about 3/4 inch thick.
Use a biscuit cutter or mason jar to cut out biscuits, pressing straight down without twisting.
Place the biscuits on a parchment-lined baking tray, keeping them close together.
Brush the tops of the biscuits with leftover buttermilk.
Preheat the oven to 450 degrees Fahrenheit and bake the biscuits for 15 to 20 minutes until golden brown.
In a skillet, add 1 pound of sausage to a cold skillet and turn the heat to medium to medium-high.
Break up the sausage into small pieces and cook until browned.
Add 3 tablespoons of all-purpose flour to the sausage and stir for 2 to 3 minutes.
Pour in 3 cups of milk and bring to a simmer, stirring to combine.
Season the gravy with black pepper and adjust the heat to maintain a simmer.
Let the gravy thicken until it coats the back of a spoon, adjusting seasoning as needed.
Remove the biscuits from the oven and add butter to the tops while hot.
Serve the sausage gravy over the warm biscuits.
