1/3 cup honey
1 teaspoon vanilla extract

peanut butter

🥗Healthier: almond butter

💰Cheaper: sunflower seed butter

Almond butter is lower in saturated fat and offers a different flavor profile.

honey

🥗Healthier: maple syrup

💰Cheaper: agave nectar

Maple syrup is a natural sweetener that can be used interchangeably.

chocolate chips

🥗Healthier: dark chocolate chips

💰Cheaper: cocoa nibs

Dark chocolate chips contain less sugar and more antioxidants.

coconut flakes

Toasted coconut adds flavor without significantly changing the cost.

1

In a bowl, add 1 cup of old-fashioned oats.

2

Add 2/3 cup of unsweetened shredded coconut.

3

Add 1/2 cup of ground flax seed.

4

Add 1/2 cup of semi-chocolate chips.

5

Add 1 cup of creamy peanut butter, ensuring to get all of it out of the measuring cup.

6

Add 1/3 cup of honey and use a spatula to incorporate all of it.

7

Add 1 teaspoon of vanilla extract (added later in the process).

8

Stir everything together until thoroughly combined.

9

Spread the mixture along the sides of the bowl to help it chill faster.

10

Cover the mixing bowl and chill in the refrigerator for 1 to 2 hours or until the mixture is chilled.

11

Scrape the sides of the bowl and use a spoon or your hands to roll the mixture into balls.

12

Squeeze the mixture first and then roll it into a ball shape.

13

I made 15 large balls, but you can also make smaller balls if desired.

14

Serve and enjoy immediately or refrigerate in a sealed container for up to 1 week or freeze for up to 3 months.
