In a food processor, add bell peppers and red onion; pulse until finely chopped but not pureed.

In the same food processor, add all the black beans and mash them until mostly smooth; transfer to the bowl with the vegetables.

Add cooked quinoa and shredded zucchini to the bowl; squeeze out excess water from the zucchini before adding.

Mix in taco seasoning, salt, and pepper to the mixture.

Add the egg to the mixture and combine well.

Start by adding half of the panko breadcrumbs and mix; then add the rest of the breadcrumbs until the mixture holds together.

Cover the mixture with plastic wrap and refrigerate for 1-2 hours to firm up.

Wet your hands with water to prevent sticking, then form the mixture into patties of your preferred size.
