Argentinian-Style Stuffed Pork Loin with Chimichurri

Preheat oven to 375°F (190°C).
Slice the pork loin lengthwise, creating a pocket for stuffing.
Sauté onion and garlic in olive oil until translucent, about 3-4 minutes.
Add bell pepper and spinach, cooking until wilted, about 2-3 minutes.
Remove from heat and stir in bread crumbs, cheese, parsley, oregano, cumin, salt, and pepper.
Stuff the pork loin with the mixture, securing with kitchen twine or toothpicks.
Rub the outside of the pork with olive oil, salt, and pepper.
Place in a roasting pan and add bay leaves around it.
Roast in the oven until the internal temperature reaches 145°F (63°C), about 45-60 minutes.
Let rest for 10 minutes before slicing.
Meanwhile, prepare chimichurri by mixing parsley, garlic, vinegar, olive oil, red pepper flakes, salt, and lemon juice.
Serve sliced pork with chimichurri drizzled on top.
