Instructions

  1. 1Wash mint and coriander leaves thoroughly under running water.
  2. 2Remove thick stems from mint and coriander leaves.
  3. 3Add mint leaves, coriander leaves, green chili, ginger, garlic, and cumin seeds to a blender.
  4. 4Blend the mixture until smooth, adding water as needed to achieve desired consistency.
  5. 5Add lemon juice and salt to the blended mixture.
  6. 6Blend again briefly to combine all ingredients evenly.
  7. 7Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.

Khajur Imli Ki Chutney is a popular Indian condiment made from dates and tamarind, often served with snacks and street food.

Ingredients

  • 1 cup dates, pitted and chopped
  • 1/2 cup tamarind pulp
  • 1/2 cup water
  • 1/4 cup jaggery (or brown sugar)
  • 1 tsp cumin powder
  • 1/2 tsp red chili powder
  • 1/2 tsp salt
  • 1/4 tsp black salt
  • 1/4 tsp garam masala
  • 1 tbsp lemon juice

Instructions

  1. 1In a saucepan, combine the chopped dates, tamarind pulp, and water. Cook over medium heat until the dates soften, about 5-7 minutes.
  2. 2Add jaggery (or brown sugar) to the mixture and stir until it dissolves completely.
  3. 3Add cumin powder, red chili powder, salt, black salt, and garam masala. Mix well to combine all the spices.
  4. 4Simmer the mixture for another 5 minutes, stirring occasionally to prevent sticking.
  5. 5Remove from heat and let it cool slightly.
  6. 6Once cooled, blend the mixture in a blender until smooth.
