1 onion, chopped
1 cup fennel, chopped
1 cup sweet peppers, chopped
1/2 cup scallion, chopped
1 jalapeno, minced
4 cloves garlic, minced
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped (for garnish)
1 can (28 oz) chopped tomatoes
1 lb seafood (grouper, cod, mahi, sea scallops, shrimp, mussels)
1/2 cup dry white wine
1 cup tomato juice
Salt to taste
Pepper to taste

Start by chopping the onion.

Dice the fennel.

Cut sweet peppers into julienne strips or use regular bell peppers if sweet peppers are unavailable.

Separate the white and light green parts of the scallion from the green part.

Chop jalapenos and add them to the mix.

Add garlic just before adding liquid to the pot.

Add white wine to the pot and bring it to a boil for a wine reduction.
